5 Tips for Perfect Biryani
Master the layers, rice, and timing behind a memorable biryani — starting with quality halal meat and spices from Millad's.
Biryani is one of the most celebrated dishes across South Asian, Middle Eastern, and Afghan cuisines. It rewards patience and good ingredients. Here are five tips that make the difference between a decent pot and one that gets recipe requests.

Start with quality bone-in protein. Bone-in chicken, goat, or lamb gives deeper flavour than boneless cuts. Marinate with full-fat yogurt, ginger-garlic paste, and your spice blend for at least 4 hours — overnight is even better. The acid in yogurt tenderizes the meat while the spices penetrate all the way through.

Par-cook your basmati rice. Boil in heavily salted water until the rice is about 70–80% done — still has a slight bite in the centre. Drain immediately. The grain finishes cooking in the dum (steam) stage, keeping each kernel separate and fluffy rather than mushy.

Layer with intention. Alternate meat, rice, crispy golden onions, fresh mint, coriander, and a few tablespoons of saffron-infused warm milk between each layer. Even distribution means every spoonful has the right balance of meat, rice, and aromatics.

Seal the pot for "dum." Cover tightly with a lid sealed with dough or foil, then cook on very low heat (or place a heat diffuser under the pot) for 20–25 minutes. The trapped steam gently finishes the rice and melds every flavour together. Resist lifting the lid during this stage.

Rest before you serve. Take the pot off heat and let it rest 10–15 minutes undisturbed. This lets moisture redistribute so the bottom layer isn't soggy and the top isn't dry. Gently fold from the sides — never stir from the centre — to keep the grains intact.
